Here is our latest version of our Pizza Napoletana dough recipe (work in progress recipe stay-tuned! subscribe and comment your feedback - all opinions welcome!):
-(2-3 hours or more) Pizza Napoletana Dough (makes ~2 pizzas)
- 3 ¾ cups (500g) 00 flour (or all-purpose if that's what you have)
- 1 ½ tsp salt
- 1 tsp active dry yeast (3g) or 1/3 tsp fresh yeast (1g)
- Note adjust yeast ratio as needed:
- Longer, slower ferments, especially in the refrigerator overnight, often use less fresh yeast (around 0.1-0.2% of flour weight) while quicker, room-temperature ferments may require more (0.3-0.5% flour weight)
- 1 ½ cups (360ml) warm water
- Note adjust water ratio as needed depending on your environment - aim is 61% hydration - with higher hydration in dryer climates, less in humid climates.
How to make the dough:
- Mix warm water and yeast, let it sit 5-10 mins.
- Add flour and salt. Mix until shaggy.
- Knead by hand or use the KitchenAid stand mixer for about 8-10 mins until smooth and springy.
- Let it rise in a lightly oiled bowl, covered, for 2–3 hours or until doubled.
- Punch it down, divide into two balls. Let them rest another 30 mins or overnight in the refrigerator.
Roll out the dough to form your pizza, and add your favorite sauce and toppings. To finish the pizza we cook it in our Ooni Pizza Oven at 800 degrees for 60 - 90 seconds. Buon Appetito!
